CHALLAH BAKING AND KOSHER CUISINE

Challah, the braided Sabbath bread, is the center of the traditional Sabbath table. Over the centuries, women have taken pride in their role as the designers and shapers of the family sustenance, symbolized in the festive loaf.

Today both men and women are rediscovering the joys of making this special bread themselves. Of course there are the usual ingredients involved, but a lot more than mixing and kneading goes into challah baking.

When you think of kosher cuisine do you think of potato kugel, brisket and tzimmis? These are traditional items on the kosher holiday menu, but there is so much more. Jews have lived all over the world and have adapted recipes from every culture to fit the laws of kashruth. Couscous, melawach, and gormeh sabzi are also on the traditional list…if you’re from Morocco, Yemen or Iran.
